The Difference Between White & Black Truffle Oil

Most people recognize truffles as a more fancy, “pinkies up” kind of ingredient, a type of mushroom that grows beneath the ground and are a very expensive ingredient. But we have some delicious truffle-infused items for you to enjoy without breaking the bank!

The bulk of truffles harvested come from France, Italy, and the Pacific Northwest of the US but can and are grown worldwide. Prices vary depending on the market, but white truffles can cost $4,000 per pound, and black truffles can cost anywhere from $300 to $800 per pound!

Foodies love the rich and distinctive flavor it brings to a dish. However, for most mainstream restaurant dishes you’re tasting truffle OIL in a dish, olive oil that is infused with truffle extract. But what is the difference between truffle oils?

The primary difference between black truffle oil and white truffle oil is the fragrance, which in turn does translate into the flavor. Black truffle oil is stronger and earthier compared to the more delicate, onion/garlic fragrance found in white truffle oil.
Neither should be used as cooking oils but both can be used in all sorts of dishes. Use as a finishing oil to drizzle a few drops onto eggs, pasta, pizza, risotto, potatoes, polenta, meats, and fish. And amazing on french fries! Can also be used for marinades and salad dressings.
