Simple Summer Yum!

Summer fun is non stop and you shouldn’t have to be stuck in the kitchen, so here are some delicious and easy solutions to feeding your hungry gang!

 

 

 

Summer Yum Tips:

  • GRILLING VEGGIES: cut veggies in equal sizes, coat evenly with oil & get your grill good and hot (450), grilling over indirect heat with lid closed if possible.
  • WOODEN SKEWERS: can burn easily over a hot grill. Soaking them in warm water for 10 to 30 minutes before threading will keep the skewers from cooking along with the food.
  •  KEEP IT COOL: you’d be surprised at just how much you can cook out on the grill and not get the kitchen all heated up, especially using cast iron on the grill !

Grilled Salmon Burgers

 

 

Here is a deliciously easy twist on a healthy classic to throw on your grill, that will quickly become a favorite! Salmon is loaded with nutritional value, both fresh or canned would work for this recipe, and this fish absorbs so many different flavors so well but we highly recommend our custom blended Alaskan Salmon Seasoning as your go to ‘yum’. Top with a drizzle of our Yum-Yum sauce (in-store only) for a fantastic finishing kick of flavor!
 

EXTRA TIP: Alaskan Salmon Seasoning is not only for salmon, we have MANY customers who love it on their grilled chicken, sprinkled on their roasted sweet corn, or tossed on cut potatoes with olive oil and roasted in the oven!

Ingredients
1 pound salmon (if fresh, skinned and chopped small pieces – if canned, crush up any bones into the meat)
1/2 cup panko crumbs
1 egg (or substitute 1/4 cup of mayo)
2 green onions chopped
1 tablespoon fresh lemon or lime juice
1 to 2 tblsp of Alaskan Salmon Seasoning

Instructions
Prepare Salmon and mix in large bowl with other prepared ingredients.
Mix well.
Heat indoor grill pan or outdoor BBQ to medium high heat.
Cook for about 4 minutes on each side until cooked through.
Top with your favorite condiments… we suggest Yum-Yum sauce or a sweet summer fruit salsa!

Juicy Watermelon Oolong Slushie Fun

 

 

 

Missouri Life Magazine is one of our favorite places to find inspiration for stay-cations all year round, and their July/August issue is packed filled with Missouri Lakes and fun places to visit state wide this summer!
It also inspired our latest recipe for Fox2Now’s morning show – a Watermelon Slushie, featuring our Juicy Watermelon Oolong Tea !  A perfect recipe to include the kids in and so easy to take along on those trips to the lake.

 

 

Zucchini Pizza Boats

 

 

Summer gardens are overflowing with zucchini and squash and sometimes it’s not the easiest vegetable to get the kids to eat, but this recipe will be one we are sure the whole family will love (and you will love it because it’s super easy)!
This recipe was inspired by one of our favorite food blogs, Dinner At The Zoo and features our very own Spaghetti Sauce Mix blend, which will add amazing flavor to such a simple dish.
 

Ingredients 
4 medium zucchini
salt and pepper to taste
2 teaspoons olive oil
1 pound mild Italian sausage or ground beef or ground turkey
1 16 oz can crushed tomatoes
4 tbls Spaghetti Sauce Mix
3/4 cup shredded mozzarella cheese
cooking sprayDirections
Preheat the oven to 400 degrees F. Spray a large rectangular baking with cooking spray.
Wash well and then cut the zucchini in half lengthwise, trimming off the stem ends.
Use a spoon to carefully scoop some of the inner flesh out of the zucchini.
Lightly salt and pepper the zucchini then arrange the zucchini in the baking dish.
Heat the olive oil in a large pan over medium high heat.
Add the ground meat and cook for 4-5 minutes, breaking up the meat with a spatula. Once cooked nearly through, add the Spaghetti Sauce mix and the can of tomatoes. Simmer for 15 minutes.
Spoon the meat mixture evenly into the zucchini shells, then top with the shredded cheese.
Bake for 25 minutes or until zucchini is tender and cheese is melted and golden brown.
Serve and enjoy!

 

 

 

 

It’s a new world out there, which can sometimes be a bit too much. A cup of CBD infused coffee or tea might just take the edge off, make those glasses a little rose-colored…

 

 

How To Grill That Summer Corn

 

 

One of our favorite Missouri summer harvest veggies is sweet corn and here are a few tricks to making the best corn on the cob (without heating up the kitchen) !

  • Peel back the husks without tearing them off, then proceed to clean off the ‘silk’ threads. Pull the husks back into place
  • Soak the husked corn for 15-30 minutes in cold salt water
  • heat up your grill to about 450 and well oil the grate
  • place the wet corn on the grate for approximately 15-20 minutes, turning every 5 minutes
  •  you’ll know it’s done when kernels are tender with pricked with tip of knife
