Shake it up this Thanksgiving with familiar flavors paired together for an unforgettable (and easy to prepare) side dish. These Bacon Jam Twice-Baked Potatoes are one part nostalgia and one part something new- but its BACON!
Bake sweet potatoes until done. Cool for 30 minutes, cut in half and use spoon to carefully scoop out cooked potato flesh in to a bowl (save those skins). After all potatoes are done, roughly mash with a fork and spoon back in the skins. Place filled potatoes on a baking sheet and spoon 1 tbl of Bacon Jam on each potato top. Place in 350 degree oven for 15 minutes, placing mini-marshmallows on top for the last 5 minutes.
Bonus tip: cook an extra potato but do not fill its skin. Adding the extra potato mash makes the others extra full and delicious looking).
