This one-pan meal is so delish – they will want seconds!
I riffed this recipe after being inspired by some internet surfing, and what I had on hand. We loved it!!! And I learned something today which was a lightbulb moment for me…using Chicken Base in the marinade (which was also the sauce)!
4 boneless, skinless chicken thighs
1/4 cup olive oil
Juice of one lemon
1 small yellow onion, roughly sliced
2 garlic cloves, smashed
1 tbl garlic pepper
1 tsp minced garlic
1 tbl chicken base (or one boullon cube)
2 tbl dijon mustard
Preheat oven to 400 degrees. Combine all ingredients in a ziplock bag and refrigerate for 2-6 hours. Preferably in a cast iron pan, heat all ingredients until the outer chicken parts are no longer pink. Then either transfer to an oven-safe dish or take the cast iron pan with chicken and bake in the oven for 20 minutes.
Serve with noodles or potatoes and a green vegetable. Enjoy!!
