Homemade White Chili

This classic White Chili recipe will be a definite crowd-pleaser. It also works well if you need to substitute ingredients and you can also use dried onion and garlic in place of fresh chopped with delish results.

Ingredients:

1 tbsp olive oil
1 onion chopped small (or 1/4 cup dried chopped onion)
2 garlic cloves minced (or 1 tbls dried minced garlic)
2 chicken breasts, cooked & chopped or shredded
4 cups chicken broth
1 can green chilies
1-2 tsp cumin
1 tsp oregano
1/2 tsp paprika
1 tsp white pepper
1 8oz block of cream cheese
2-3 cans of white beans
1 1/2 cups of frozen or canned corn
Salt to taste

 

Directions:
1. Heat oil in a pot to med-high heat, add in onions, garlic, and seasoning and cook quickly until onions soft.
2. Add in chicken and cream cheese until cheese gets soft then add in all remaining ingredients, and simmer on medium heat for at least 45 minutes to get all the flavors bound together.
3. Top with sour cream and chives, Monterey jack cheese or avocado.
