Grilled Pound Cake with Boozy Fruits

By using a few short cuts (like buying a store or bakery bought pound cake) and then ‘jazzing’ it all up a bit (by simply presoaking your fruits in a tasty liquid) this will be the easiest and tastiest dessert ever to come from your grill!

And you don’t have to use liquor for this recipe (although alcohol cooks off/evaporates at only 172 degrees) the lime juice with the sugar is a delicious substitution!

 

 

 

 

 

 

 

GRILLED POUND CAKE AND BOOZY FRUITS

Four 1/2-inch-thick slices of Classic Pound Cake

Melted unsalted butter
optional: sprinkle of Vietnamese Cinnamon or Chinese 5 Spice

3 halved and pitted peaches and plums OR 2 cups of assorted berries

1/2 teaspoon sugar, plus more for sprinkling

Zest and juice of 1/2 a lime OR 1/4 cup of liquor like brandy, rum or bourbon

Whipped cream

DIRECTIONS:
Presoak in the lime juice and 1/2 tsp of sugar OR the liquor and 1/2 tsp of sugar, for 30 minutes to an hour your fruits of choice.
If using larger fruits like peaches or plums, grill for 3 minutes on each side.
You could use a grilling basket to warm up smaller fruits like berries.
Brush slices of pound cake with butter and if you like sprinkle with the cinnamon or Chinese 5 Spice. Grill over medium heat, turning once, until toasted.
Once done, immediately place the slice of cake on a plate, top with the fruit and then a dollop of whipped cream.
