Do You Know Your BBQ ?



BBQ has been around in some form or another since man first discovered fire, but the art of BBQing has become a cultural indicator across the USA with great pride being built upon not only style of ‘Q’ing, but cuts of meat and especially the sauce and rubs used to give it it’s mouth watering flavor. Do you know the most common differences in BBQing styles?

 

Memphis Style

  • Meat of Choice: pork ribs, chicken
  • Sauce Style: mostly known for dry rub technique but traditionally sauce is a thin sweet tomato & vinegar base
 

St. Louis Style

  • Meat of Choice: pork steaks, ribs
  • Sauce Style: a long soak till fallin’ off the bone, sweet tomato with a tangy vinegar profile
 

Kansas City Style

  • Meat of Choice: mixed bag of meats due to vast regional influences
  • Sauce Style: sweet thick tomato based often featuring molasses
 

Texas Style

  • Meat of Choice: beef brisket
  • Sauce Style: cola’s such as Dr. Pepper and Coke along with worcestershire sauce is added to most their spicy & tangy tomato based sauces having a hint of sweetness
 

Carolina’s Style

  • Meat of Choice: pulled pork & chicken
  • Sauce Style: heavy vinegar based in East, tomato based in West, and most common is mustard based also served in Georgia & South Carolina

Homemade St. Louis Style BBQ Sauce

 

St. Louis Style BBQ Sauce

  1. Whisk together all ingredients in a saucepan and simmer stirring on low heat for 30-40 minutes.
  2. Use as a sauce during or after barbecuing.
  3. Refrigerate for up to 1 month.

Easy St. Louis Pork Steak Marinade
Prepare our Italian Salad Dressing as directed. Add to plastic zip bag along with pork steaks. Marinate in refrigerator for 2 hours (up to overnight.) Remove steaks and grill to perfection!
