Xanthan Gum


Xanthan Gum is a thickening agent, adds gluten-like properties to doughs, and helps emulsify liquids, as in salad dressings.


Used as a food thickening agent & oil separation preventative, most often in salad dressings and sauces. Helps suspend solid particles, such as spices. Used in gluten-free baking to give the dough or batter a “stickiness” that would otherwise be achieved with the gluten.
