The intense and somehow herbal aroma from this stigma used mainly in Spain, India, and France, is the secret of any good “Paella” and other rice dishes from these countries traditional cuisine. For most recipes, soak threads and add toward the END of cooking (last 10 minutes) Requires 75,000 blossoms to make one pound of saffron thereby making it the world’s most expensive spice. Fortunately, a little goes a long way. Historically, saffron was used as a remedy for bronchitis, fevers, gout and hangovers!
