Lemon Garlic Chicken

This one-pan meal is so delish – they will want seconds!

I riffed this recipe after being inspired by some internet surfing, and what I had on hand. We loved it! And I learned something today which was a lightbulb moment for me…using Chicken Base in the marinade (which was also the sauce)!

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • Juice of one lemon
  • 1 small yellow onion, roughly sliced
  • 2 garlic cloves, smashed
  • 1 tbsp garlic pepper
  • 1 tsp minced garlic
  • 1 tbsp chicken base (or one boullon cube)
  • 2 tbsp dijon mustard

Instructions

Preheat oven to 400 degrees. Combine all ingredients in a ziplock bag and refrigerate for 2-6 hours. Preferably in a cast iron pan, heat all ingredients until the outer chicken parts are no longer pink. Then either transfer to an oven-safe dish or take the cast iron pan with chicken and bake in the oven for 20 minutes.

Serve with noodles or potatoes and a green vegetable. Enjoy!
